Thanks @CLOSE_U</p> </blockquote> <p><span class="ucoz-forum-post" id="ucoz-forum-post-900815"><br/><strong>Banana Corn Fritters with Avocado Crema</strong> <br/>Serves 4 <br/><br/>4 bananas <br/>3/4 cup stone ground cornmeal <br/>2 teaspoons baking powder <br/>4 pinches each of salt and cinnamon <br/>A couple pinches cayenne (optional) <br/>Vegetable oil, for frying <br/>Avocado Crema, see recipe below, for serving <br/><br/>Mash bananas with a fork and gently stir in the cornmeal and baking powder. Do not over mix. Season with salt, cinnamon, and a touch of cayenne, if desired. <br/><br/>Add a 1/2-inch of vegetable oil to a skillet over medium heat. Drop small balls of the batter into the hot oil and press lightly to form thick discs the size of half dollars. Cook about 2 minutes per side or until golden and slightly puffed. <br/><br/>Avocado Crema <br/><br/>Makes 3 cups <br/><br/>4 medium tomatillos, husked, washed, and cut into quarters <br/>1 to 2 jalapeno chiles, stemmed, seeded, and cut into quarters <br/>1 to 2 tablespoons freshly squeezed lime juice <br/>1/4 small onion, diced (about 2 tablespoons) <br/>1/2 bunch cilantro, stems trimmed <br/>1/2 teaspoon salt <br/>1 medium avocado, peeled, seeded, and mashed (about 1 cup) <br/>3 tablespoons crema, crème fraiche, or sour cream <br/><br/>Puree all of the ingredients, except the avocado and crema, in a blender or food processor. When smooth, add the avocado and crema and pulse two or three times.
